Spinach protein waffles are a delicious option for a healthy breakfast or lunch, and they can be made in 5 minutes! This recipe is dairy-free made with a non-dairy yogurt, but you can also use a regular yogurt if you prefer.

While not all waffle recipes are the healthiest foods you can eat, there are certainly exceptions. Like today’s featured recipe, spinach protein waffles!

This batter couldn’t be easier to put together. All you gotta do is blend up the mix, spinach, oats, non-dairy or Greek yogurt, an egg and some stevia and you have yourself a real treat. Plus, you can’t really ever complain about a recipe that hides veggies!

Time to grab a fork and dive in!

Yields4 Servings
 1 cup Gluten Free Golden Malted Waffle Mix
 1 Large Egg
  cup non-dairy yogurt or plain Greek yogurt
  cup oats
 1 handful of spinach
 1 dash dash stevia

Plug in waffle iron and turn on.

Blend all ingredients together.

When waffle iron is ready, pour all batter into the iron and close.

Cook until no longer steaming (5 minutes or so). Waffle will be slightly golden brown.
